DATE PUFF

Ingredients:
2 egg whites, beaten stiff
1 heaping Tbs. whole wheat or other low or non-gluten pastry flour
1 tsp. baking powder2 cups chopped dates
Orange Nonfat Whipped Cream
Recipe:
1. Beat egg whites until stiff.
2. Carefully fold in the flour, baking powder, and the chopped dates.
3. Pour mixture in a nonstick pan sprayed with cooking spray.
4. Bake for about 20 minutes in a 350 F/175 C oven; Date Puff will rise, and then fall.
5. Serve hot by itself or cold topped with Orange Nonfat Whipped Cream.
