MOCK MINCEMEAT TART

Ingredients:

9-inch/23cm pie shell
Filling:
1 cup chopped dried apples
1 cup chopped dates
1 cup raisins
1 tablespoon lemon juice
1 teaspoon cinnamon

Garnish:
1 cup Nonfat Whipped Cream
Recipe:
1. Prepare pie shell according to recipe instructions.
2. Stew together soaked dried apples, dates and raisins in enough water to cover them; add lemon juice. Simmer gently for about 10 minutes or until all water is absorbed.
3. Pour mixture carefully into cooled pie shell. If you like you can puree the mixture in a food processor or blender.
4. Spoon mixture into pie shell.
4. Bake in a moderate oven (350 F/175 C ) for 35-40 minutes.
6. Allow pie to cool and serve with Nonfat Whipped Cream if desired.
