APPLE STREUSEL

Ingredients:
9-inch/23cm pie shell
Filling:
6 tart eating apples, peeled, cored and cut into eights
Juice of 1 lemon
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Streusel Topping:
1/4 cup buckwheat flour
6 tablespoons unsweetened concentrated apple juice
Grated rind of 1 lemon
2.tablespoons stevia
Recipe:
1. Prepare pie shell according to recipe instructions.
2. Peel and core apples, cut into eighths and toss in lemon juice.
3. Arrange prepared apples in cooled pie shell. Sprinkle with spices.
4. Combine 1/4 cup flour, apple juice, lemon rind and stevia and pour over apples.
5. Bake in a preheated hot oven (450 F/2205C ) for 15 minutes. Reduce to 350 F/175 C and bake for 30 minutes.
