NO EGG CAKE

Ingredients:
1 1/4 cups water
1/2 cup date sugar (ground, dried pitted dates)
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2 cups gluten-free flour
5 teaspoons baking powder
Recipe:
1. Bring to a boil the water with the date sugar; add the spices, boil for two more minutes; cool.
2. Add flour and baking powder to date mixture and blend well.
3. Bake in a non-stick pan sprayed with cooking spray and bake at 350F/175C oven for 45-60 minutes

Ready made all purpose gluten-free flour is easy to use and usually contains millet flour, rice flour and potato starch.
