COCONUT BALLS

Ingredients:

1 loaf fresh buckwheat or quinoa bread, crusts removed, cut into cubes
2 tablespoons stevia
1 cup dried coconut, shredded
1 cup oat or rice milk
Recipe:
1. Combine the bread cubes, stevia and milk; mix well.
2. Shape into balls, roll each in coconut, pressing with hand.
3. Place on non-stick cookie sheet sprayed withe cooking spray.
4. Bake in a cool preheated oven (300 F/150 C) for 20 to 22 minutes until lightly toasted.
5. Remove from sheet and cool.
