Ingredients:
3 cups whole wheat bread crumbs or other low or non-gluten bread crumbs
4-6 Tbs. unsweetened orange juice
3 cups mango, skinned, seeded and sliced
1 tsp. cinnamon

Recipe:
1. Combine the bread crumbs with the orange juice and place a layer in a nonstick 9-inch/23cm pie dish sprayed with cooking spray.
2. Add a layer of mango and sprinkle with cinnamon.
3. Repeat layers until all are used, ending with crumbs.
4. Bake in a 350 F/190 C oven for about 1 hour, or until mangoes are soft.
