CARIBBEAN SALAD

Ingredients:
1 can (1 pound/450g) pineapple pieces, drained
4 stalks celery, chopped
1/2 green pepper, sliced
1/2 red pepper, sliced
4 tablespoons Low-fat Mayonnaise Dressing
1 tablespoon lemon juice
2 teaspoons stevia
Lettuce
Recipe:
1. Drain pineapple pieces, and combine with celery, peppers, and Low-fat Mayonnaise.
2. Add lemon juice and stevia and mix well.
3. Arrange some lettuce leaves on individual salad plates and mound salad in the centre
