CUCUMBER SANDWICH SPREAD

Ingredients:
1 cup plain nonfat yogurt
1 teaspoon vinegar
1 teaspoon spearmint flakes
1 teaspoon chopped scallions
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
4 cucumbers, peeled and sliced thinly

Recipe:
1. Mix spread all ingredients except cucumbers in blender or food processor.
2. Combine thinly sliced cucumbers and serve chilled
Serves:
about 1 cup
Notes:
The mixture can be eaten as a salad, a dip or spread on whole wheat bread or toast and topped by sliced tomatoes.
