SAVOURY TOMATO AND PIMENTO SANDWICHES

Ingredients:
4 tomatoes, peeled and chopped
1 large onion, chopped
2 green pimentos, seeded and chopped
1/4 cup green capers
1/4 cup gherkins, chopped
1 long loaf whole wheat bread
1/4 tsp. paprika
Salt and pepper
Recipe:
1. Peel the tomatoes; take the seeds out of the pimentos.
2. Chop the former ingredients and combine with the capers, and gherkin.
3. Cut the bread half longways and remove all the crumb.
4. Mix crumb with tomato mixture adding paprika, salt and pepper to taste.
5. Fill the two halves of the loaf with the mixture.
6. Press them together and put loaf into the refrigerator.
7. To serve, cut either in large pieces for packed lunches or in thin slices piled on a serving dish.

Notes:
Tomatoes are a good source of vitamin C. Eat with sources of iron such as whole wheat bread to boost absorption of the mineral. They also contain potassium for blood pressure control
