TUSCAN RICE SALAD (Maintenance)

Ingredients:
2 cups cooked brown basmati rice, cooled
1/4 cup cooked broad beans
4 green onions, finely chopped
4 Tbs. cucumber, cut into small cubes
1/2 medium green pepper, sliced thinly
1/2 medium red pepper, sliced thinly
Salt and pepper

Dressing:
1/2 cup plain nonfat yogurt
1 tsp. lemon juice
1 tsp. chopped chives
Recipe:
1. Mix all the salad ingredients together and pour over the dressing.
2. Season and serve.

Brown rice is whole grain rice minus the tough
