CRACKED WHEAT SALAD

Ingredients:
1 cup cracked wheat (available in natural food stores
1 onion, finely chopped
6 Tbs. chopped parsley
3 Tbs. chopped fresh mint
1 tomato, peeled and diced
4 Tbs. tomato juice
Juice of 1 lemon
Lettuce leaves
Salt and pepper
Recipe:
1. Soak the cracked wheat in water for about 30 minutes.
2. Drain and squeeze out as much moisture as you can.
3. Spread on absorbent kitchen paper to dry.
4. Mix the wheat with the chopped onion; season to taste with salt and pepper.
5. Add the tomato, parsley, mint, tomato juice, and some of the lemon juice. Taste to find out if more salt or lemon is required. The wheat should have a lemony flavor.
6. Serve on a dish spread with lettuce leaves.
