BURRITOS WITH BEAN FILLING

Ingredients:
8 whole wheat tortillas:
2 3/4 cups whole wheat flour
1/2 tsp. salt
3/4 cup water

Filling:
15-ounce/420g can pinto beans, drained
2 medium onions, chopped
1 medium green pepper, chopped
1/2 tsp. chili powder
1/2 tsp. salt
Pinch of cummin powder

Garnish:
2 medium tomatoes, chopped
2 cups chopped lettuce
Recipe:
1. Prepare tortillas by mixing flour, salt and water in a bowl.
2. Knead by hand until dough becomes hard (1-2 minutes).
3. Separate dough into 8 balls.
4. Take lumps of dough and roll them into very thin rounds (1/8-inch/3mm thickness).
5. Place the burritos onto a hot nonstick pan and cook for 20 seconds on each side. Keep warm by wrapping in aluminum foil.
6. Prepare bean filling by putting all ingredients in blender or food processor and mixing until creamy.
7. Serve by filling burritos with bean filling and topping with chopped tomatoes and chopped lettuce.
