MUSHROOM WITH TOMATO SAUCE

Ingredients:
1 medium onion, finely chopped
4-6 tablespoons water
1 clove garlic, finely chopped
14-ounce/400g can chopped tomatoes
2 tablespoons tomato paste
4 cups thickly sliced fresh or canned mushrooms
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon Tabasco sauce
Salt
Recipe:
1. Saute onion in a little water until soft.
2. Add garlic, tomatoes and tomato concentrate and simmer for 15 minutes.
3. Add a little water if liquid is low.
4. Add mushrooms, spices and Tabasco sauce.
5. Simmer for 10 more minutes, until liquid is absorbed.
6. Season with salt.

Serve hot with rice, whole wheat bread or cracked wheat, or cold as an appetizer.
