SPINACH STUFFED TOMATOES

Ingredients:
4 medium boiled potatoes, chopped in small pieces
4 large ripe tomatoes
1 medium onion, finely chopped
1/2 teaspoon celery salt
1/4 garlic powder
1/4 teaspoon paprika
1 tablespoon finely chopped parsley
2 tablespoons plain nonfat yogurt
1/4 cup Nonfat Italian Dressing
Lettuce leaves
Recipe:
1. Boil potatoes, drain, cool and chop into small pieces
2. Cut tomatoes in half and scoop them out.
3. Prepare Nonfat Italian Dressing according to recipe
4. Combine chopped potatoes with onion, celery salt, garlic powder, paprika, parsley, yogurt and dressing.
5. Fill the tomato halves with potato mixture.
6. Serve on lettuce leaves.
