COCONUT AND DATE MUFFINS

Ingredients:
1 3/4 cups buckwheat flour
5 teaspoons baking powder
1/4 cup dried coconut, grated
1 cup chopped dates
2 tablespoons grated orange rind
3/4 cup coconut milk
1/2 cup unsweetened orange juice
Recipe:
1. Stir all the dry ingredients together.
2. Combine the milk and orange juice; add to the dry ingredients; blend well.
3. Drop the batter into 12 non-stick muffin tins sprayed with cooking spray.
4. Bake in a preheated 375 F/190 C oven for 20 to 25minutes

Notes:
You can add 1 lighly beaten egg for a fluffier muffin but reduce the orange juice to 1/4 cup
