ORANGE AND DATE MUFFINS

Ingredients:
2 cups whole wheat flour
5 teaspoons baking powder
1/2-1 cup chopped dates
1 cup skim milk (zero fat)
2 tablespoons unsweetened orange juice concentrate
1 teaspoon Grand Marnier liqueur (optional)
1 tablespoon grated orange peel
1 egg white, lightly beaten
Recipe:
1. Stir the dry ingredients together in a small mixing bowl.
2. In another bowl, combine the milk, orange juice, the liqueur, orange peel and egg white.
3. Add liquid to dry ingredients and blend well.
4. Fill 2/3 full 12 non-stick muffin tins sprayed with lecithin (Pam).
5. Bake in a preheated 375 F/190 C oven for 20 to 25 minutes.
