COCOA AND DATE MUFFINS

Ingredients:
2 cups whole wheat pastry flour
2 Tbs. unsweetened cocoa powder
2 tsps. baking powder
1 cup chopped dried dates
1 tsp. vanilla
1 cup skim milk (zero fat)
2 Tbs. rum
1 egg white, lightly beaten
1/4 cup natural shortening substitute
Recipe:
. Mix all dry ingredients together in a bowl.
2. Combine vanilla, milk, rum, egg white and shortening substitute together; add to dry ingredients and stir.
3. Spray a 12 nonstick muffin tin with cooking spray.
4. Fill tins with batter to 2/3 full.
5. Bake in a preheated 400 F/200 C oven for 20 to 25 minutes

Cocoa contains stearic acid - the only saturated fat which will not raise cholesterol levels. It is also a very good source of calcium for strong bones
