FIG LOAF

Ingredients:
1 cup chopped dried figs
1 cup boiling water
1/2 cup cold water
1 tsp. soda
1 egg white, lightly beaten
1/4 cup natural shortening substitute
2 cups whole wheat pastry flour (sifted)
2 tsps. baking powder
1 tsp. cinnamon
Recipe:
1. In a mixing bowl combine figs and boiling water.
2. Add cold water and stir in soda, egg white, natural shortening and flour mixed with baking powder and cinnamon; beat until well blended.
4. Pour batter into a nonstick loaf pan sprayed with cooking spray.
5. Bake in a preheated oven set at 350 F/175 C for 60 minutes or until
inserted toothpick comes out clean.
