Ingredients:
2 3/4 cups whole wheat flour
1/4 cup grated unsweetened coconut
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon allspice
1 cup chopped dried prunes
1 1/4 cups skim
1 egg white, lightly beaten

Recipe:
1. Stir all the dry ingredients together including the chopped dried prunes.
2. Combine the milk and the egg white.
3. Add liquid to dry ingredients and stir well. If batter is too dry add a little more milk.
4. Turn the batter into a non-stick loaf pan sprayed with lecithin (Pam).
5. Bake in a preheated 350 F/175 C oven for 1 hour and 15 minutes, or until a toothpick comes out clean.
