WATERCRESS SALAD (Maintenance)

Ingredients:
4 bunches watercress
4 medium stalks celery, sliced
1 bunch radishes, sliced
1/2 cup Nonfat Thousand Island Dressing
1/2 tsp. caraway seeds
Recipe:
1. Place watercress in a salad bowl.
2. Add sliced radishes and celery.
3. Add Nonfat Thousand Island Dressing and caraway seeds and toss.

Notes:
This cruciferous vegetable has lucosinolates that fight various digestive cancers, but also vitamin C and A that also protect against this disease. A good source of fiber for regulating blood sugar levels.
