GAZPACHO SALAD (Maintenance)

1 large onion, diced
1 large cucumber, peeled and diced
10 medium tomatoes, diced
1 small green pepper, diced
2 cloves garlic, crushed
1 tsp. salt
1/2 tsp. ground cummin
1/4-1/2 tsp. pepper
1 cup breadcrumbs
3/4 cup Nonfat French Dressing
12 ice cubes
1. Cut tomatoes, onion, cucumber and green pepper into small dice.
2. Crush garlic with salt to a smooth paste.
3. Add cumin and pepper, mix in bread crumbs.
4. Gradually stir in dressing.
5. Combine breadcrumb mixture with diced vegetables.
6. Mix well and chill for a few hours.
7. Serve by putting 2 or 3 ice cubes in each bowl.
Serving suggestion Another way of preparing Gazpacho is to slice the vegetables and to arrange these and the breadcrumbs in alternate layers in a glass salad bowl. Pour over Nonfat French Dressing and chill. Onions may help protect against stomach
