FRUIT FILLING OR TOPPING

Ingredients:
1/2 cup chopped dried dates
3/8 cup fresh apricots, cored and pureed with skins in blender
1/4 cup raisins
1 Tbs. whole wheat flour dissolved in 3 tablespoons water
3/4 cup unsweetened apple juice
1 tsp. vanilla
Recipe:
1. Put fruits in a bowl.
2. Combine 1 tablespoon whole wheat flour with 3 tablespoons water and 3/4 cup apple juice in saucepan.
3. Add vanilla and cook over low heat until thickened, stirring constantly; cool to room temperature.
4. Combine flour mixture with the fruits in a bowl.
5. Cool and refrigerate in covered container.
Serves:
1 1/2 cups
Notes:
Bake a Fat-free Pie Shell and fill with fruit filling for a delicious fruit pie. Also use as a low-fat topping for pancakes, waffles or toast.
