Ingredients:
4 cups water
2 vegetable bouillon cubes
2 large onions, chopped
1 cup canned or fresh tomatoes, peeled and chopped
1 clove garlic, chopped
1/4 teaspoon tarragon
Sprig of thyme
1 bay leaf
1/4 cup wholewheat vermiceli

Recipe:
1. Bring water and vegetable bouillon cubes to a boil.
2. Remove from heat and keep warm.
3. Saute onion and tomatoes in a little water until soft.
4. Add bouillon cubes, garlic, herbs and seasoning.
5. Boil for 30 minutes then strain and boil up again.
6. Throw in the vermicelli and poach quickly for ten minutes
