Ingredients:
2 vegetable stock cubes
1 cup hot water
2 medium cucumbers, peeled and cut into chunks
1 1/2 cups skim milk
2 cups plain nonfat yogurt
1/4 teaspoon celery salt
1/4 teaspoon cayenne pepper
1/4 teaspoon curry powder
1 tablespoon chopped chives
Recipe:
1. Dissolve vegetable stock cubes in 1 cup hot water; cool.
2. In blender or food processor blend stock with cucumber, yogurt and milk.
3. Season to taste with spices.
4. Serve chilled and garnish with chopped chives.
