CHEESE AND CURRY BISCUITS

Ingredients:
3/4 cup ground raw almonds (consistency of flour)
1/2 tsp. baking powder
1-2 tsp. curry powder
4 Tbs. olive or canola oil
2/3 cup low-fat grated cheese
1 egg yolk or equivalent egg substitute
2 Tbs. skim milk
1/8 tsp. dry English mustard
1/2 tsp. salt
Dash of cayenne pepper
Recipe:
1. Preheat oven to 400 F/200 C.
2. Mix the nuts, baking powder, and curry powder together.
3. Add the oil and the cheese and mix very well.
4. Combine the egg yolk, milk, mustard, salt and pepper and add to the nut mixture. Stir until a dough is formed.
5. Carefully roll out on a surface sprinkled with a little ground almond. Cut in any desired shape. Place with a spatula on a greased cookie sheet.
6. Bake for about 7-10 minutes.
