EGGS LORRAINE

Ingredients:
4 eggs
2 thin slices smoked ham, cut in half
4 teaspoons olive or salad oil
Salt and pepper
Recipe:
1. Place 1 teaspoon oil and half a slice of smoked ham in each of 4 individual heatproof baking dishes.
2. Break an egg into each dish; season to taste with salt and pepper.
3. Bake in a 450 F/230 C oven for 8 to 10 minutes or until egg whites are set.

Serving suggestion Also excellent as a light lunch, or quick and tasty main course accompanied by a crisp green salad.
