CHEESE SCRAMBLED EGGS

Ingredients:
4 eggs
1/4 cup skim milk (zero fat)
1/4 cup low-fat grated cheese
1 tablespoon chopped parsley
1/4-1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive or salad oil
Recipe:
1. Combine all ingredients together, except the oil, and beat lightly until blended.
2. Heat oil in pan.
3. Pour egg mixture and reduce heat to very low. When mixture begins to set, stir gently with a wooden spoon until eggs are
cooked, but are still moist.
