CHEESE AND ALMOND CREAM

Ingredients:
1 1/4 cups nonfat cottage cheese
1 Tbs. unsweetened apple juice
1/2 cup raw almonds
1/2 tsp. almond essence
1 Tbs. toasted flaked almonds
Recipe:
1. Put first four ingredients in a blender or food processor and blend until smooth and creamy.
2. Chill and serve with a sprinkling of almonds.

Notes:
Fat content: Although this cream with almonds is high in fat, 15g of fat per serving, most of it is monounaturated, which can help lower cholesterol. But if breakfast is the only protein meal you'll have for the day, you are well within your limits.
