COTTAGE CHEESE CAKE ICING

Ingredients:
1 1/2 cups low-fat cottage cheese (1% fat)
6 teaspoons sugar substitute (Equal or Nutrasweet)
1 tablespoon rum
Recipe:
1. Put all ingredients in blender or food processor and whip until smooth and creamy.
2. Spread on top and sides of cooled cake. Keep refrigerated.
Serves:
Enough for top and sides of 9-inch/23cm round cake
