CAKE FILLING

Ingredients:
1 cup ricotta cheese or Nonfat Cheese
2 egg whites
1 teaspoon almond essence
6 teaspoons sugar substitute (Equal or Nutrasweet
Recipe:
1. Put all ingredients in blender or food processor and whip until smooth.
2. Split any flour-less cake in two layers and fill with ricotta filling.
Serves:
Enough to fill a 9-inch/3cm round cake
