Ingredients:
1 1/4 cups ground walnuts (consistency of flour)
1/4 cup coarsely ground walnuts (consistency of coarse sand)
1/3 cup unsweetened cocoa
4 eggs, separated
1 tsp. vanilla extract
1 tsp. grated lemon rind

Recipe:
1. Combine the walnuts, syrup, and cocoa in a bowl.
2. Beat the egg yolks until creamy and add them to the walnut mixture.
3. Add the vanilla and lemon rind and mix well.
4. Beat the egg whites until stiff; fold them into the walnut mixture carefully.
5. Grease or spray with lecithin (Pam) a 9-inch/23cm baking dish and pour the mixture into it.
6. Bake in a preheated 350 F/175 C oven for 30 minutes, or until an inserted toothpick comes out clean.
7. Garnish with chopped walnuts on top and serve hot or cold.
