COCONUT MOCHA PIE

Ingredients:
9-inch/23cm starch-free pie shell
Filling:
2 1/2 cups Nonfat Whipped Cream
1 tablespoon instant coffee
1 teaspoon vanilla
1 envelope plain gelatine
2 tablespoons water
2 tablespoons toasted unsweetened coconut
Recipe:
1. Prepare starch-free pie shell according to recipe.
2. Follow instructions for Nonfat Whipped Cream.
3. During last step, just after adding sugar substitute, add the coffee and the vanilla and beat.
4. Soften gelatin in cold water, put on top of a double boiler, and stir until it dissolves; cool for a few minutes.
5. Fold gelatin into whipped cream mixture, and pour into pie shell.
6. Sprinkle coconut on top, and chill for at least an hour.
