CRUSTLESS CHERRY CHEESECAKE

Ingredients:
1 envelope cherry flavoured sugar-free gelatin (with stevia)
8-ounce/200g package low-fat cream cheese
2 egg whites, beaten until stiff
1 cup sliced fresh cherries
Recipe:
1. In a saucepan boil 2 cups water and add gelatin.
2. Stir until gelatin is dissolved. Cool thoroughly.
3. Beat cheese in a blender or food processor until creamy.
4. Add gelatine mixture and blend.
5. In a separate bowl beat the egg whites until stiff.
6. Fold whipped cream and egg whites into cheese mixture.
7. Pour into spring-form non-stick pan and chill for about 3 hours, or until set.
8. To serve, remove sides of spring-form pan and garnish cake with sliced cherries.
