EASY CRUSTLESS STRAWBERRY CHEESECAKE

Ingredients:
1 envelope plain gelatin
1 cup water
2 packages (8-ounce/200g each) low-fat cream cheese (Philadelphia Light)
8 teaspoons stevia
1 cup sliced strawberries
or
1/2 cup dietetic strawberry jam with stevia
Recipe:
1. In small saucepan, sprinkle gelatin over 1/4 cup cold water. Let stand 1 minute. Stir over low heat until gelatin is completely dissolved.
2. In large bowl, with electric mixer, beat cream cheese with 6 teaspoons stevia and 3/4 cup water. Gradually add
gelatin.
3. Pour into spring-form non-stick pan. Chill until firm.
4. Remove sides of spring-form pan. Garnish with fresh strawberries; sprinkle with 2 teaspoons sugar substitute. If you garnish with dietetic jam omit sprinkling with sugar
substitute.
Serves:
6 to 8
