FRITATA

Ingredients:
1 small onion, finely chopped
2 tablespoons olive or salad oil
4 eggs or equivalent Egg Replacer or other egg substitute
1 tablespoon parsley, finely chopped
1 tablespoon chopped mint
1 tablespoon chopped basil
Salt and pepper
Recipe:
1. Saute onion in oil until transparent.
2. Combine in a bowl with beaten eggs, parsley, mint, basil, salt and pepper to taste.
3. Cook slowly on one side in oil until brown. Turn to cook other side.

Serving suggestion Serve hot for lunch or as a main course with sliced tomatoes.
