Ingredients:
2 green peppers, sliced
3 tablespoons olive or salad oil
3 medium ripe tomatoes, peeled and finely chopped or 8-ounce/225g can chopped tomatoes
2 onions, sliced
1 clove garlic, crushed
6 tablespoons cooked ham, diced
Salt and pepper
6 eggs or equivalent Egg Replacer or other egg substitute

Recipe:
1. Saute peppers in 3 tablespoons oil.
2. Add tomatoes, onion, garlic and ham; season to taste; simmer for about 30 minutes.
3. Beat eggs and stir into vegetable mixture. Omelette should be soft and wet, not overcooked.
