8 eggs or equivalent Egg Replacer or other egg substitute
2 tablespoons olive or salad oil
5 tablespoons grated Cheddar cheese (low-fat)

Recipe:
1. Beat eggs lightly.
2. Mix in 4 tablespoons grated cheese, salt and pepper; beat until thick and creamy.
3. Pour into a greased casserole or individual molds; sprinkle with the remaining cheese.
4. Bake for about 1/2 an hour ina350 F/175 C oven.
