TUNISIAN EGGS

Ingredients:
3 tablespoons oil
3 medium green peppers, cut into strips
2 medium onions, sliced
8 small tomatoes, peeled and halved
8 eggs
Salt and black pepper
Recipe:
1. Fry the peppers and onions in oil in a large pan.
2. Season to taste with salt and pepper; simmer until peppers are soft.
3. Add the halved tomatoes and cook until they too are soft.
4. Drop the eggs whole and cook until set.
5. Season again and serve.
