PIMENTO TUNA SALAD

Ingredients:
6 1/2-ounce/180g can tuna in water, drained
4-ounce/110g can red pimentos
1/8 tsp. French mustard
Salt and pepper
Recipe:
1. In blender or food processor, blend a can of tuna fish and red pimentos until smooth.
2. Add 1/8 teaspoon French mustard.
3. Season with salt and pepper.
3. Stir well and serve.
Serves:
1 1/4 cups
Notes:
Serving suggestion: Use also as a spread on Flourless Bread or serve on lettuce leaves sprinkled with grated lemon rind. Hardly any fat but lots of beneficial heart-healthy omega-3's in this salad.
