CHEESE AND ANCHOVY SPREAD

Ingredients:
3 tablespoons olive oil
3/4 cup grated Ementhal or Swiss cheese
2 teaspoons vinegar
1-ounce/28g can anchovies
1 teaspoon prepared mustard
Salt
Recipe:
1. Combine in food processor or blender oil, grated cheese, vinegar, anchovy and mustard. Mix well.
2. Season to taste with salt and pepper.
Serves:
1 cup
Notes:
Serving suggestion Spread on Flourless Bread (see recipe) and top with tomato slices and lettuce. Also delicious spread on celery stalks.
