Ingredients:
1 medium chicken, cut into serving portions
5 tablespoons olive or salad oil
1 clove garlic, chopped
Grated rind and juice of one lemon
1/4 teaspoon dry thyme
Salt and pepper
2 tablespoons finely chopped parsley

Recipe:
1. Place chicken is a shallow bowl.
2. Sprinkle with 4 tablespoons oil, garlic, grated rind and lemon, thyme and salt and pepper to taste.
3. Marinate in this mixture for two hours turning pieces from time to time.
4. Place chicken pieces and juices in baking dish and brush pieces with 1 tablespoon oil.
5. Cook at 350 F/175 C one hour or until tender.
6. Remove from oven, sprinkle with parsley and serve immediately. Remove skin before you eat the chicken.
