4 medium skinless chicken breasts, cubed
Dash of pepper
2 tablespoons olive or salad oil
3/4 cup finely chopped onion
1 clove garlic, minced
1 1/2 tablespoons curry powder (for hot curry)
1 tablespoon soy sauce
1/2 cup evaporated skim milk

Recipe:
1. Sprinkle chicken cubes with pepper.
2. Place chicken into pan with the oil and cook until golden brown.
3. Add onion and garlic; cook until onion is transparent.
4. Sprinkle with curry powder.
5. Cover and cook for 10 minutes.
6. Add evaporated skim milk.
7. Heat, stirring constantly, but don't boil.
8. Simmer for 5 minutes and serve hot.
