GINGER CHICKEN

Ingredients:
1 medium chicken, cut into serving pieces
4 tablespoons olive or salad oil
1/4 cup sherry
1 tablespoon soy sauce
1 tablespoon lemon juice
2 tablespoons finely chopped ginger
Recipe:
1. Saute chicken pieces with 2 tablespoons oil in skillet.
2. When pieces are brown transfer to an oven-proof casserole.
3. In saucepan combine the sherry, soy sauce, 2 tablespoons oil, lemon juice and ginger; bring to a boil.
4. Pour over chicken, cover and bake in a preheated 350 F/175 C oven for 1 hour, turning pieces once.
5. Serve warm but remember to remove skin before you eat the chicken.
