Ingredients:
1 medium chicken, cut in serving portions
4 tablespoons olive or salad oil
1/4 cup diced pimento
1 clove garlic, minced
1 medium onion, sliced
Salt and pepper

Recipe:
1. Saute chicken pieces in oil.
2. When chicken has cooked for 15 minutes, add pimento, garlic and onion.
3. Cover and continue to cook until chicken and vegetables are tender. Season to taste with salt and pepper. Serve hot.
