ROAST TURKEY WITH OYSTER STUFFING

Ingredients:
1 turkey (weighing 8-12 pounds/3.5-5.5kg)

Oyster stuffing:
3 cans (6-ounce/85g each) oysters
1 large onion, finely chopped
1 tablespoon olive or salad oil
3 sticks celery, chopped
1 cup chopped canned or fresh mushrooms
1/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon rosemary
1 tablespoon chopped parsley
Recipe:
1. To prepare stuffing, cook the onion in oil until golden.
2. Combine in a bowl the onion, celery, mushrooms, herbs and parsley.
3. Drain the oysters; lightly chop them, add to the mixture. Put the stuffing in the cavity of the turkey,
4. Sew up with fine string and a trussing needle, or secure with poultry pins and string.
5. Bake turkey as in previous recipe.
Remember to remove the skin before you eat the turkey.
