COD WITH SHALLOT SAUCE

Ingredients:
1 pounds/450g cod fillets
2 Tbs. olive or canola oil
3 Tbs. wine vinegar

Shallot Sauce:
4 shallots, finely chopped
4 Tbs. finely chopped parsley
2 Tbs. olive oil
2 Tbs. lemon juice
Salt and pepper
Recipe:
1. Saute fillets in 2 tablespoons oil until golden.
2. Remove from heat and pour vinegar over it.
3. Let stand for 5 minutes and transfer to serving dish.
4. To make sauce, whisk in blender the shallots, parsley, 2 tablespoons olive oil, lemon juice, salt and pepper to taste.

Notes:
Parsley is a wonderful green containing lots of vitamin C, iron and vitamin A. Also a good source of omega-3 fatty acids, substances found mostly in fish. Fat content: Cod is a very low source of fat, less than 0.7g per 3 oz./100g. A serving of Cod
