BOURRIDA

Ingredients:
2 pounds/900g mackerel or any similar fish, cut into 2-inch/5cm
slices
3 tablespoons olive or salad oil
1 small onion, sliced
4 anchovy fillets
1/2 clove garlic
1 tablespoon pine nuts
1 tablespoon chopped parsley
1/2 cup white wine
Recipe:
1. Put oil in pan and cook the onions in it until golden.
2. Add the slices of anchovy, parsley, pine nuts and garlic and cook for 5 minutes.
3. Place mackerel pieces on top of anchovies, season with salt and pepper and cook until brown.
4. Add the wine and cook again very slowly until it is all absorbed.

Notes:
Serving suggestion Serve with Low-fat Mayonnaise prepared with two cloves of garlic crushed and mingled in. Accompany with Steamed Spinach and a Cole Slaw Salad
