SHELLED MUSSELS MARINIERE

Ingredients:
40-60 frozen mussels, cleaned with shell removed
4 shallots, finely chopped
2 tablespoons olive or salad oil
1 cup white wine
3 tablespoons finely chopped parsley
2 sprigs thyme
1 bay leaf
Pepper
Recipe:
1. Defrost mussels.
2. Saute shallots in oil until transparent.
3. Add wine, parsley, thyme, bay leaf and pepper to taste, and simmer for 10 minutes.
4 Addmusselsto wine mixture.
5. Reduce the cooking liquor to half its original volume.
6. Sprinkle with parsley.
7. Remove bay leaf and serve immediately.
