SHRIMP IN WINE SAUCE

Ingredients:
2 pounds/900g shrimp, shelled and deveined
4 tablespoons olive or salad oil
1/2 cup dry wine
2 teaspoons tomato paste
4 tablespoons warm water
1/2 teaspoon salt
1/4 teaspoon pepper
Dash of cayenne pepper
1 tablespoon chopped parsley
1 scallion, chopped
2 teaspoons lemon juice
Recipe:
1. Heat the olive oil in a skillet.
2. Add the shrimp and saute for 3 minutes.
3. Drain the oil but keep it.
4. Add the wine to the shrimp and cook over low heat until the wine is absorbed.
5. Combine reserved oil, tomato paste, water, salt and pepper in a saucepan.
6. Cook over low heat for 5 minutes.
7. Pour this sauce over the shrimp.
8. Add the parsley and scallion and cook for 5 minutes. Remove from the pan, add the lemon juice and serve.
