INDIAN HADDOCK

Ingredients:
2 cups buttermilk
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 teaspoon Tabasco
1/2 teaspoon cumin seeds
1/4 cup chopped green pepper
1 1/2 teaspoon turmeric
2 pounds/900g haddock fillets
2 tablespoons sesame oil
Recipe:
1. Combine buttermilk, lemon juice, salt and Tabasco in a large pan.
2. Bring to a boil and simmer for 10 minutes.
3. Add cumin seeds and green pepper.
4. Rub gently fish fillets with turmeric.
5. Add fish to milk mixture and simmer for 10 minutes.
6. Just before serving stir into liquid 2 tablespoons sesame oil.
